Naughty-but-nice chocolate chia pancakes from Linwoods

With everyone’s favourite day just round the corner, super food manufacturer Linwoods has created the perfect naughty-but-nice Pancake Day (13 February) recipe, to ensure we all enjoy a treat this year (no matter how big or small!)

Chocolate Chia Pancakes:



60g oats (gluten free if necessary)

15g raw cacao powder/ cocoa powder

1 tsp baking powder

60g ripe banana

125ml unsweetened almond milk

1 tbsp milled chia seeds

1-2 tsp maple syrup (optional)

½ tsp vanilla extract

Chocolate Sauce:

1 tbsp raw cacao powder/ cocoa powder

1 tbsp maple syrup

2 tbsp full fat coconut milk

1 tsp arrowroot starch + 1 tbsp water

Preparation method: 


  1. Place all pancake ingredients into a blender/ Nutri Bullet and blend until smooth. Set the batter to one side
  2. Heat a non-stick 10-inch pan over a medium heat. Cook 2.5 tbsp of batter per pancake
  3. Cook one side for 2-3 minutes, flip and then cook for a further 2 minutes. (To make flipping easier, place the pan under a pre-heated grill for 1 minute, return to the stove top and cook for another minute)
  4. For the chocolate ganache, whisk the first three ingredients in a pan, bring to the boil and then simmer for 2 minutes
  5. Mix together the water and arrowroot starch. Add the mixture to the chocolate pan and whisk while simmering. Once combined, allow to heat and thicken for 1-2 minutes
  6. (The chocolate sauce can be made in advance and stored in the fridge)

Serve pancakes topped with chocolate sauce and your choice of toppings (i.e. hemp seeds, desiccated coconut, blackberries.)
